Data collection English PDO cheese Stilton

The project LIFE TTGG – The Tough Get Going (focused on hard and semi-hard cheeses) has the aim of improving the efficiency of cheese production processes in Europe, especially for PDO products, reducing the environmental impact.
For this reason, from September 17 to 20, we went in the UK to the dairies where the PDO Stilton is produced. We have collected information about the adopted technologies and environmental characteristics of this cheese.
